What is a Paladar?
A paladar (plural paladares) is a family run restaurant in Cuba serving authentic, home-made Cuban food. The name comes from the Spanish word for “palate”. At one time these small, privately owned restaurants were illegal, but after the the USSR collapsed the Cuban government was forced to make economic reforms. One of these reforms was allowing privately owned businesses. However, the government maintained strict controls over the amount and type of food offered, the hiring of labour as well as the number of seats allowed. In 2010 the government reviewed the controls and subsequently loosened them. Today the paladares are more numerous and more diverse than they were before the reforms. Families run many of the paladares out of a converted part of their home. Anybody taking Havana day tours should take the time to refuel their bodies at a local paladar.
